I'm all about soups lately, and recently tried making several different types of ramen. While the noodles are delicious, I love the option of taking leftovers for work... and reheated ramen tends to absorb all of the broth.

- Mason jars, or similar leak-proof containers
- Noodles (I have only used pad thai rice noodles because I need to avoid gluten, so my instructions are specific to rice noodles)
- Water*
- Your choice of vegetables
- Your choice of broth base, for example:
- a few tablespoons of soy sauce
- sriracha
- boullion cubes/powder
- miso paste
- Your choice of protein, cooked and chopped into bite size pieces
This is SO SIMPLE to make, and it's even better if your workplace (or lunch place) has instant hot water available.
The prep work is to simply cook any proteins, chop any vegetables, and *pre-soak your rice noodles in the water for about 30 minutes.
You're going to layer this similar to a mason jar salad. In order:
- Soup base of your choice. This is completely to taste, so you can base it off of your favorite ramen recipe if you have one, or just guesstimate. 2-3 tablespoons of soy sauce, a chicken boullion cube, and an optional dash of sriracha is a good one to try, if you're not sure.
- Vegetables and proteins. I don't find that it makes a huge difference if proteins or veggies are on the bottom, so I've made them one layer for this list. Just don't sit in the noodles directly in the base, because they may just soak everything up and leave you with nothing for the broth.
- Noodles.
When it's time to eat, simply fill your container with boiling water so that the noodles are completely covered. If you don't have a stove to boil water at work, and your workplace doesn't have instant hot water (check the coffee machine!), you can simply fill a separate container and heat in the microwave for 2 minutes or until boiling, then add to your jar. Seal the container and let sit for 3-5 minutes until noodles are soft. Mix and enjoy!
